March 11, 2014 Drinks Mediterranean pita, a tasty, healthy snack I am not a vegetarian or a vegan by any means, but eating clean is something that is very important to me. One summer, I was working full time, hating my life, and the owner of the company starting passing out these stuffed pitas. Obviously free food is something I took advantage of. By the first impression of my boss, he does not look like a healthy, clean eating kind of guy so this snack took me by surprise. He put these things together: Ingredients: whole wheat pitas tabouli (homemade or store bought) hummus (homemade or store bought) quinoa (cooked) The easiest and most delicious things all in one! All you have to do is cut a pocket pita in half. It is under your discretion if you want both halves or just one; no judgement. Spread the hummus inside the bottom of the pita and also, your choice how much or how little hummus you would like. From there, spoon warm or cold quinoa overtop the hummus. The thicker, the better. And lastly, sprinkle tabouli over the quinoa. The tabouli is very strong in flavor so be careful how much you use! Thats it! Enjoy!
