March 3, 2016 Archives, Drinks, Drinks, Food, Food & Beverage, Recipes Indulge in Tropical Treats During a Spring Break Spent in Michigan If you like piña coladas, but are caught in Michigan for spring break, no need to worry – your vacation can still have some tropical flair even with piles of melting snow surrounding you outside. Treat yourself to a relaxing and budget friendly “stay-cation” day with a drink, meal and relaxing face mask that will be just as Instagram worthy as your friends’ pictures on the beach. Pour Yourself a Drink A tropical drink is a must for your “stay-cation” day. Treat yourself to a piña colada for a sweet escape to the tropics. Ingredients: 3-ounces of pineapple juice 1-ounce of white rum 1-ounce of coconut cream Ice Recipe: Mix all ingredients in a blender until smooth. Pour into a chilled glass, garnish with a cherry or a pineapple slice and enjoy! Bring the Heat in Your Mexican Meal Imagine you are in Mexico by making some delicious quesadillas. These are simple and easy, and will fit into your college budget. You can customize them to fit your taste preferences by adding a variety of toppings. Ingredients: 4 flour tortillas 1 cup of grated cheese, sharp Cheddar or Mexican blend 4 tablespoons of butter Sour cream, salsa or guacamole as toppings 2 cooked chicken breasts (optional) Recipe: Lay tortillas flat on a cookie sheet. Sprinkle some cheese on half of each tortilla. Add some cooked chicken if you would like. Fold the tortillas in half over the cheese to make a half-moon. Warm a skillet over low heat and add 1 tablespoon of butter. Add the tortilla to the skillet and cook until it is lightly brown, about 2 minutes. Using a spatula, gently lift the edge to check it. Once one side is brown, flip over and brown the other side. Use a spatula to transfer to individual plates or a large platter. Repeat with remaining ingredients. Top with sour cream, salsa, or guacamole and enjoy! Freshen Up with a Face Mask Nothing says relaxation like a refreshing face mask (and, March in Michigan lacks the opportunity for Vitamin D!) Have a spa day at home by making a simple avocado facemask with just a few ingredients. Recipe: Mash ½ of a ripe avocado with 2 tablespoons of honey. Apply to face and let sit 20 minutes. Rinse well and enjoy your smooth skin!
