October 19, 2015 Drinks, Drinks, Recipes The Monday Mix: Pumpkin Spice ‘Rita It’s no surprise that just about anything and everything that can be pumpkin flavored has made its way onto the shelves – and has rapidly been selling. And one thing our go-to #PSL often overshadows is a favorite pumpkin mixed drink. So, as orange becomes the only color in sight, add some pumpkin puree and pumpkin liqueur to a margarita and make a Pumpkin Spice ‘Rita. Ingredients: 1 can of pumpkin puree 1 ½ ounces of tequila ½ ounce Cointreau orange liqueur ½ cup brown sugar ¼ cup sugar 1 cinnamon stick 2 cups of water 1 lime 1 tsp allspice 1 tsp salt 1 pinch of nutmeg Instructions: 1. Combine the pumpkin puree, brown sugar, cinnamon stick, nutmeg and water into a saucepan over low heat to make a pumpkin simple syrup. 2. Stir for 20-30 minutes, or until the cinnamon flavor is evident and the mix is smooth. Remove from heat, and let the simple syrup cool – use a strainer to get rid of excess pumpkin pulp. 3. Prepare the margarita glass by combining the sugar, allspice and salt onto a small plate. Use a wedge of lime and run it around the rim of the glass. Then dip the glass rim onto the small spiced sugar plate. 4. Now, combine half a lime’s juice, tequila and Cointreau with the 2-ounce pumpkin spice syrup. Add in the pinch of nutmeg. 5. Stir the mixture, and serve on the rocks.
